Chickpea and Egg Curry (Easy Protein-Packed Breakfast Recipe)

This high protein chickpea and egg curry is a flavorful and budget-friendly meal perfect for busy weeknights. Made with simple pantry ingredients, it is filling, healthy and easy to prepare in under 30 minutes.

Anda Chana

Ingredients:

✔ 1 cup canned chickpeas (or boiled chickpeas)
✔ 2 large eggs
✔ 1 small onion (finely chopped)
✔ 1 tomato (chopped)
✔ 1 tsp cumin seeds
✔ 1 tsp turmeric powder
✔ 1 tsp red chili powder
✔ Salt to taste
✔ 2 tbsp cooking oil

Method:

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onion and sauté until golden brown.
  4. Add tomatoes and cook until soft.
  5. Stir in spices and cook for 1 minute.
  6. Add chickpeas and simmer for 5–7 minutes.
  7. Crack eggs directly into the pan and cover.
  8. Cook until eggs are done to your liking.
