Chicken Biryani

Ingredients

Chicken pieces 1 1/2 kg
Rice (boiled) 3 cups
Ginger/garlic paste 1 tbsp
Yogurt 1 cup
Green chillies (crushed) 8
Black pepper (crushed) 1 tsp
Lemon juice 4 tbsp
Onions (finely cut) 3
Orange food colour 1 pinch
Fresh mint (finely cut) 1 bunch
Mint and Lemon slices for garnishing
Salt to taste
Oil 1 cup
Butter 1 tbsp

Method:

Fry chicken with ginger/garlic paste in a pot until it turns brown.
Add yogurt, chilies and salt and cook till dry.
Add fresh mint, pepper, lemon juice and remove from flame.
Heat oil in a wok; fry onions until it turns brown then Remove.
Spread onions on a paper allow to become crisp and crumble with fingers.
Pour hot oil over chicken; allow to cool.
Layer a wide-necked pot with half rice, chicken, half onions and remaining rice.
Dissolve food colour in milk; pour over rice. Keep on dum.
Garnish with mint, lemon slices and remaining onions.
