Vegetable Omelette is a quick, healthy, and protein-rich breakfast recipe perfect for busy mornings. Made with eggs, fresh vegetables, and simple spices, this fluffy omelette is nutritious, filling, and easy to prepare in just a few minutes. It’s ideal for breakfast, brunch, or even a light dinner.
Ingredients:
Eggs – 4
Onion – ½ cup (chopped)
Tomato – ½ cup (chopped)
Potato – ½ cup (boiled & chopped)
Green coriander – 2 tbsp (chopped)
Green chillies – 2 (chopped)
Milk – ¼ cup
Red chilli flakes – 1 tsp
Salt – to taste
Oil – 2–3 tbsp
Method:
Step 1: In a bowl, add eggs, milk, salt, and red chilli flakes. Beat well until fluffy.
Step 2: Add chopped onion, tomato, boiled potato, coriander, and green chillies. Mix well.
Step 3: Heat oil in a frying pan on medium flame.
Step 4: Pour the omelette mixture into the pan and spread evenly. Cover and cook on low flame for 2–3 minutes.
Step 5: Flip the omelette carefully and cook the other side until golden.
Step 6: Remove on a plate and serve hot with paratha or toast.
Tip: For extra fluffy omelette, add 1 tbsp milk or cream and cook on low flame.
