Ingredients:

Bread slices – 4
Cream cheese – 4 tbsp
Greek yogurt – 2 tbsp
Salt – to taste
Black pepper – ½ tsp
Carrot – ½ cup, finely chopped
Cucumber – ½ cup, finely chopped
Capsicum – ½ cup, finely chopped
Coriander leaves – 2 tbsp, chopped
Optional: Lettuce leaves, tomato slices

Method:

Step 1: Prepare the Creamy Filling
In a bowl, mix cream cheese, Greek yogurt, salt, and black pepper until smooth.
Step 2: Add Vegetables
Add chopped carrots, cucumber, capsicum, and coriander. Mix gently to combine.
Step 3: Assemble Sandwiches
Spread the mixture evenly on bread slices. Place another slice on top.
Step 4: Cut and Serve
Cut sandwiches into triangles or rectangles. Serve immediately.
